Guacamole

Clark and Barbara both make versions of this. It turns out a little differently each time, depending on exactly what is on hand and the audience. This is one version. california (Haas) avocados - the ones with the bumpy skins - are much preferred over the smooth skinned Florida variety.

Ingredients

1 ripe avocado 1 ripe tomato, peeled 1 tablespoon salsa 1 teaspoon fresh lemon juice sour cream or yogurt grated onion/chopped scallion

Instructions

Skin and mash avocado with fork. Chop tomato and fold in. Add salsa and lemon juice. Depending on taste, texture and quantity desired, mix in some sour cream or 4 yogurt and onion. Serve with tortilla chips.
